2012 Paradise IV The Dardel

Winemaker Doug Neal nailed this shiraz vintage. 50% destemmed, crushed; 30% whole berry; 20% whole bunch; wild ferment and mlf; 13 months in oak (20% new). The very small crop might have produced a muscular wine, this is all silk and velvet, starting with a fragrant spice and red fruit bouquet, moving fluidly onto a medium-bodied, elegant and supple palate with red and black fruits, some charcuterie nuances and just a hint of new oak.
